Description

A warm, creamy butter chicken dish that is perfect for chilly evenings, combining rich flavors and comforting memories.


Ingredients

  • 600 g chicken breast, diced
  • 150 g plain yogurt
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp garam masala
  • 1 tsp sweet paprika
  • 1 tsp salt
  • 1 tbsp lemon juice
  • 1 tbsp oil
  • 2 tbsp butter
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tbsp grated ginger
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • 1/2 tsp chili powder (optional)
  • 400 g crushed tomatoes
  • 150 ml cream (or coconut milk for lactose-free)
  • 1 tsp sugar
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Marinate the chicken: In a bowl, combine all the marinade ingredients: yogurt, turmeric, cumin, garam masala, sweet paprika, salt, lemon juice, and diced chicken. Mix well. Cover and refrigerate for at least 30 minutes (ideally overnight) for the flavors to develop.
  2. Brown the chicken: Heat oil in a large skillet over medium heat. Add the marinated chicken and cook until golden brown, about 6-8 minutes. Once cooked, remove the chicken from the skillet and set aside.
  3. Prepare the sauce: In the same skillet, melt the butter. Add the onion and sauté until it becomes translucent, around 5 minutes. Follow with garlic and ginger, cooking for another minute until fragrant.
  4. Add the spices and tomatoes: Stir in coriander powder, garam masala, and chili powder (if using). Cook for a minute before adding the crushed tomatoes. Allow this mixture to simmer for about 10 minutes, enhancing the flavor.
  5. Incorporate cream and sugar: Pour in the cream and add sugar, stirring to combine. Let this simmer for an additional 5 minutes, then taste to adjust seasoning as needed.
  6. Combine chicken and sauce: Return the browned chicken to the pan, mixing well to coat the pieces in the creamy sauce. Allow everything to simmer together for 5 minutes to meld the flavors.
  7. Serve: Garnish with fresh cilantro and serve alongside fluffy basmati rice and warm naan for the perfect cozy meal.
