  • 2 cups strawberries, hulled and sliced
  • 1 cup blueberries
  • 2 cups pineapple, diced
  • 1 cup kiwi, peeled and sliced
  • 1 tablespoon honey (or maple syrup)
  • 1 tablespoon freshly squeezed lime juice
  • Fresh mint leaves (for garnish)
  • 1 cup grits
  • 4 cups water or broth
  • 1 pound shrimp, peeled and deveined
  • 1/2 cup heavy cream
  • 1 cup shredded cheese (like sharp cheddar)
  • 4 tablespoons butter
  • Salt and pepper to taste
  • A sprinkle of paprika (for flair)

Instructions

  1. Preheat your oven to 375°F (190°C). Line your pie crust in a pie dish. In a bowl, whisk together the eggs, milk, salt, and pepper until creamy. Add your chopped veggies and cheese. Pour the mixture into the crust and bake for 35-45 minutes, or until golden and set.
  2. Combine strawberries, blueberries, pineapple, and kiwi in a large bowl. Drizzle with honey and lime juice, gently tossing to combine. Chill in the refrigerator.
  3. Bring the water or broth to a boil in a pot. Gradually stir in the grits, then reduce heat to low. Cook until creamy, stirring frequently (about 5-7 minutes). Stir in heavy cream, cheese, and butter until combined and velvety. Season with salt and pepper.
  4. In a skillet over medium heat, melt 1 tablespoon butter. Add shrimp and sprinkle with salt and paprika, cooking until they turn golden (about 3-4 minutes per side). Remove from heat and mix with the creamy grits.
  5. Slice the quiche into wedges, serve alongside a generous scoop of fruit salad, and finish with a warm bowl of shrimp and grits. Gather around the table, and dig in!
