- 4 boneless, skinless chicken breasts
- 1 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1/2 cup basil, chopped
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season the chicken breasts with salt and pepper, then add them to the skillet. Cook until golden brown and cooked through, about 5-7 minutes on each side. Remove from skillet and set aside.
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Stir in the chopped sun-dried tomatoes and Italian seasoning.
- Pour in the heavy cream and bring to a simmer.
- Add the fresh spinach and basil, cooking until the spinach is wilted.
- Return the chicken to the skillet to soak up the sauce.
- Serve hot and enjoy!
