Description

A cozy, creamy chicken dish filled with sun-dried tomatoes and fresh spinach, perfect for weeknight dinners.


Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1/2 cup basil, chopped
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook until golden brown and cooked through, about 5-7 minutes on each side. Remove from skillet and set aside.
  3. Add the minced garlic and sauté for about 30 seconds until fragrant.
  4. Stir in the chopped sun-dried tomatoes and Italian seasoning.
  5. Pour in the heavy cream and bring to a simmer.
  6. Add the fresh spinach and basil, cooking until the spinach is wilted.
  7. Return the chicken to the skillet to soak up the sauce.
  8. Serve hot and enjoy!

Notes

This dish can be made ahead of time and reheated gently. Store leftovers in an airtight container for up to 3 days.
