Description

A creamy, cheesy Twice Baked Potato Casserole that is perfect for weeknight dinners and family gatherings.


Ingredients

Scale
  • 4 large potatoes
  • 1 cup sour cream
  • 1/2 cup milk
  • 1/4 cup butter
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup cooked turkey bacon, crumbled
  • Salt and pepper to taste
  • Chives or green onions for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Bake the potatoes for about 60 minutes or until tender.
  3. Once cool enough to handle, slice the potatoes in half and scoop out the insides into a mixing bowl.
  4. Add sour cream, milk, butter, salt, and pepper to the potatoes and mash until smooth and creamy.
  5. Stir in half of the cheese and all of the crispy turkey bacon.
  6. Spoon the mixture back into the potato skins and place them in a baking dish.
  7. Top with the remaining cheese.
  8. Cover with foil and bake for 30 minutes.
  9. Remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbling.
  10. Garnish with chives or green onions before serving.

Notes

Make ahead and store in the fridge for up to two days. Leftovers can be stored in an airtight container for 3-5 days.
