A creamy, cheesy Twice Baked Potato Casserole that is perfect for weeknight dinners and family gatherings.
Ingredients

- 4 large potatoes
- 1 cup sour cream
- 1/2 cup milk
- 1/4 cup butter
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup cooked turkey bacon, crumbled
- Salt and pepper to taste
- Chives or green onions for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Bake the potatoes for about 60 minutes or until tender.
- Once cool enough to handle, slice the potatoes in half and scoop out the insides into a mixing bowl.
- Add sour cream, milk, butter, salt, and pepper to the potatoes and mash until smooth and creamy.
- Stir in half of the cheese and all of the crispy turkey bacon.
- Spoon the mixture back into the potato skins and place them in a baking dish.
- Top with the remaining cheese.
- Cover with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbling.
- Garnish with chives or green onions before serving.
Notes
Make ahead and store in the fridge for up to two days. Leftovers can be stored in an airtight container for 3-5 days.
