Description

A refreshing summer salad combining juicy watermelon and fresh mint with zesty lime for a delightful taste of summer.


Ingredients

Scale
  • 4 lbs seedless watermelon, cut into small chunks
  • 1/4 cup fresh lime juice
  • 1/2 cup mint leaves, roughly chopped
  • 1/41/2 teaspoon salt, or to taste
  • Cayenne pepper, to taste
  • Optional: 1/2 cup diced cucumber
  • Optional: 1/2 cup diced berries
  • Optional: splash of rum substitute (about 1/4 cup)

Instructions

  1. In a large bowl, combine the luscious watermelon chunks, fresh lime juice, and chopped mint leaves.
  2. Sprinkle in the salt and cayenne pepper to taste.
  3. Gently toss all the ingredients until well combined.
  4. Allow the salad to chill in the refrigerator for about one hour or serve immediately at room temperature.

Notes

Make this salad a few hours in advance, but add the mint just before serving to keep it vibrant. Store leftovers in an airtight container for up to two days.
