Ingredients

- 4 lbs seedless watermelon, cut into small chunks
- 1/4 cup fresh lime juice
- 1/2 cup mint leaves, roughly chopped
- 1/4–1/2 teaspoon salt, or to taste
- Cayenne pepper, to taste
- Optional: 1/2 cup diced cucumber
- Optional: 1/2 cup diced berries
- Optional: splash of rum substitute (about 1/4 cup)
Instructions
- In a large bowl, combine the luscious watermelon chunks, fresh lime juice, and chopped mint leaves.
- Sprinkle in the salt and cayenne pepper to taste.
- Gently toss all the ingredients until well combined.
- Allow the salad to chill in the refrigerator for about one hour or serve immediately at room temperature.
Notes
Make this salad a few hours in advance, but add the mint just before serving to keep it vibrant. Store leftovers in an airtight container for up to two days.
